Homecooked with Natalia Rudin

Cooking at home in West London with chef, content creator and best selling author Natalia Rudin. Serving up a slow cooked beef shin ragu, boiled gently on the stove in a heavy Le Creuset pot surrounded by Natalia’s much sought after jar collection.

How does cooking off camera differ to cooking whilst filming content, do you feel it’s a different experience?

Cooking on camera feels much more methodical and efficient as I am trying to just get the right angles, the right shots and focus on how it looks. Plus I’m cooking in silence so I can use the ASMR sounds!

Cooking off camera means loud music, a bit of a boogie, less care about presentation and more on just getting lost in the process without limitations.

Do you listen to music when you cook, what kind of thing do you listen to?

It varies!

Depends on the day but at the moment I’m between 3 playlists; one is hiphop and R&B artists like Kofi Stone, RUBII, D’angelo and another is full of old school favourites like The Doors, Neil Young, The Box Tops, a bit of Al Green and Nina Simone sprinkled in.

Lastly, I’m a little obsessed with anything Brazilian or Italian, I can’t stand still listening to Italo disco it’s so much fun.

Preparing ingredients

You designed your home kitchen right, can you tell us a bit more about how it functions both for cooking and filming content?

The stove is kind of tucked around a corner so I knew I wanted something light and bright for filming purposes. I ditched the hanging cupboards for wooden shelves to keep it a bit more fluid plus I get to display my jar collection which always gets compliments.

Originally there was no island, but I like to face my guests when I'm cooking plus it’s so much easier having a large work surface to prepare on.

Then there is the all important coffee station, with my pride and joy De Longhi Specialista. My morning routine consists of coffee in bed with my dog and a book, so coffee is very important to me. I’m a bit grumpy without it. I've got all my mugs, cups and saucers and glassware on the shelves above the machine and it works perfectly.

Are there any dishes that you’re intimidated by, that you want to get around to cooking?

I really want to explore more traditional Russian food. I’m half Russian and never really delved into the cuisine further than Borscht and Pelmeni (and vodka) so there’s a lot of room for improvement.

I would love to be able to master Pirozhki which is like a hand held pastry that's fried and either filled with a sweet or savoury filling. My babushka used to make them and they were delicious.

How would you describe your cooking and recipes in a sentence?
